Avocado Chia Chocolate Pudding
Avocado and chocolate pudding aren't usually what I think of combining together. I like them both just fine. But together? Hmmm...we'll see. I was browsing on Pinterest and got inspiration from here. She has other awesome recipes to try also. The cherries on top made it even more interesting. When the avocado is blended very smooth in a blender, it takes on the flavor of the chocolate. Since I don't have a blender right now, I used a potato masher and a fork. It was a little lumpy, of course, but still tasted great.
And it doesn't take long to make this either. Just blending the ingredients and letting it chill for about 30 minutes. Since I didn't have whipped topping on hand, I used yogurt instead. There's no milk in this for those of you who are lactose intolerant. You can enjoy this pudding too. Even though the original calls for cinnamon, I left it out.
- Peel your avocado and remove the pit.
- In a large bowl, mix all the ingredients with a mixer, or use your blender.
- Let it get cold in the fridge for about half an hour. Then it's ready to be put into serving bowls. you can top with whipped topping and cherries, or yogurt, and a fruit of your choice. Enjoy.
