Squash soup that’s delicious and easy to make. You can use what you have on hand to flavor this soup to your liking. No time to cook? You can put it in the crock pot or slow cooker so when you get home, supper’s done.
You can also make up some grilled cheese to go on the side or a salad.
Another idea is crackers or chips and your favorite cheese ball or dip.
2-3 carrots, sliced
5-6 orange sweet potatoes
3 C. chicken or beef broth
2 Tbsp cornstarch to thicken it
1 C. milk or cream (optional)
1 tsp. salt (optional)
2 green peppers
1/2 tsp cumin
1 tsp. chili powder
Chop and peel the squash and drop it into your stock pot or slow cooker with your broth.
Add your seasonings.
Mix the cornstarch in a cup with some of the cold broth until it’s smooth then add it to the pot while stirring so it mixes in well. Otherwise, you’ll have a lot of clumps. The soup will get thicker as the broth heats up.
Wash and cut up the other vegetables and add them in too.
