We love moist banana bread. It’s delicious for breakfast, snack or anytime you want to munch. You can mix it in one bowl by using a good, sturdy spoon. So no worries if you don’t have a mixer. You can experiment with the amount sugar or bananas. It doesn’t have to be exact. This recipe doesn’t call for nuts, but you can add them to it for a nutty flavor. Raisins would go well too.
I can’t remember where we got this recipe, but we’ve changed so many things, it’s probably not the original one anyway. Depending on what we have on hand, we have left things out at times and it still turns out just fine.
2 C. flour
1 tsp. baking soda
1/4 tsp. salt
1/2 C. butter
3/4 C. brown sugar (or white)
2 eggs, beaten
2 1/3 C. mashed, overripe bananas
Cream together the sugar, butter and eggs.
Stir mashed bananas into the egg mixture until it’s well combined. We used a potato masher, and sometimes a fork, to mash our bananas.
Next, mix it into the bowl with the flour mixture just until everything is moistened.
Pour into a lightly greased 9 x 5 pan. Bake for 60 – 65 min. or until a toothpick comes out clean in the middle, at 350 degrees.. Let cool 10 min. before serving.
