Oat-less Granola Cookies Yield: About 3 dozen
1 c. sugar
1 c. butter (or 1 c. coconut oil, or 1/2 c. veg. oil)
2 tablespoons milk (or coconut milk, or water)
1 tablespoon vanilla
2 1/4 c. rice flour
1/2 teaspoon sea salt
1 teaspoon baking soda
1/2 c. raisins
1/2 c. coconut flakes
1/2 c. peanuts
In a large bowl add sugar, butter (or oil), eggs, milk (or water), and vanilla, mix well. Add raisins coconut flake and peanuts, stir.
In small bowl add sea salt, baking soda, and rice flour, stir well.
Turn on oven to 350 degrees.
Add dry ingredients to wet ingredients. Mix well. Drop by tablespoons onto 2 buttered (or lightly oiled) 13″x9″ pans. Bake for 8-10 minutes.
