Un-crystalize honey

There's nothing wrong with the honey when it crystalizes. You don't have to throw it out. To store honey long-term, put it into a glass jar. If you put it into plastic, the honey will take on a plastic flavor. To make the honey liquid again, it has to be heated on low. You don't want to get it too hot. Put your glass jar of honey in a pan of water and heat it slowly on the stove top. Leave the lid on to keep moisture out of the honey but be sure to loosen the lid. Heat it till the honey is back to normal. This takes about 10 to 20 min. We love the taste of fresh honey. We've used it in recipes in place of sugar with some success. I also like honey in hot tea instead of sugar. Awesome! That's my opinion though because my kids don't agree with me. Try to buy your honey from someone locally or from your farmer's market. We like it as fresh as possible. It tastes so much better! Honey can also have different flavors because of what the bees have been feeding on. By this I mean that honey from bees who have access to a fruit orchard will taste different from ones who've been in some other fruit. What's your experience with honey?
